I enjoy watching cooking shows a lot. I do not use the recipes very often. Never did and now after bariatric surgery, even less. In fact, I rarely spend much time cooking anything – fast and convenient seems to be my motto anymore.
Nevertheless, I have a beef (no pun intended) with these TV chefs. Every single one of them seems to think that the only salad dressing is a vinaigrette. They cannot whip up a salad dressing (no bottles for them – of course) without the following
- Oil – varies by chef and application
- Vinegar – once again varies by chef and application
- Can use lemon if you are adventurous
- Emulsifier
- Mustard – type varies again
- Egg yolk – for the really, really bold
- Even seen a whole egg (whoopee)
- Herbs of choice (optional)
- Parsley – flat leaf only please
- Various herbs to complement the main dish – but not too much
- Salt and pepper to taste
Now I do not know about you but vinaigrette is not my favorite dressing. In fact, even in restaurant settings (where most chefs originally worked and may still do) it is probably the 10th choice when there are only 6 choices on the menu.
I know that they do not want to detract from the salad or the main course but get real. Americans want Ranch, Honey Mustard, Thousand Island, Blue Cheese, Russian, French, or whatever. It seems like the chefs think that there is Caesar Salad dressing and vinaigrette.
